  1. (3 pound) boneless pork loin roast
  2. 2 teaspoons salt
  3. 4 cloves garlic
  4. 2 teaspoons ground black pepper
  5. I large onion, quartered
  6. olive oil
  7. 2 tablespoons chopped fresh oregano
  8. 1 tablespoon white wine vinegar
  9. 1 tablespoon ground cumin
  10. 1 lime, cut into wedges
  11. 2 teaspoons ground ancho chile

  1. Place the garlic, onion, oregano, cumin, chile pepper, salt, and pepper into a blender. Pour
  2. in the olive oil and vinegar. Puree until smooth. Spread this mixture all over the pork loin, and
  3. place into a slow cooker.
  4. Cook on Low until the pork is fork tender, 7 to 8 hours. When ready, cut the pork into chunks, or shred, garnish with lime wedges to serve.
