Lavender Molten Lava Chocolate Cakes

The Lavender infused chocolate brings an incredible olfactory treat to these sugar free gluten free chocolate molten lava cakes. I modified the original recipe posted on Tasteaholics.com using culinary Lavender and sugar free Dark Chocolate. I dare you to not eat them all in a single day!

Ingredients
  1. 2 eggs
  2. 2 egg yolks
  3. 1/3 C Swerve
  4. 2 T coconut flour
  5. 1/8 tsp Xanthan Gum
  6. 1 tsp vanilla
  7. 1 pinch of salt
  8. 6 oz. sugar free dark chocolate, chopped **
  9. 1 stick unsalted butter
  10. 3 T fresh lavender flowers **

Instructions
  1. Mix eggs and sugar until fluffy in mixer
  2. Add flour and vanilla, then mix
  3. Melt butter, lavender and chocolate in double boiler until full incorporated. Strain out the lavender
  4. Gently fold the chocolate mixture into the batter with a spatula
  5. Grease 6 ramekins, place them on a baking sheet, and fill them with batter. Bake 8-10 minutes at 400 deg.
  6. Let cool for two minutes, run a knife around the cakes and invert on a plate. Finish with sifted powdered sugar and lavender seeds.
Notes
  1. I used Chocoperfection for the sugar free chocolate, but any quality brand you find at the store will be fine, though I recommend an organic brand.
  2. If you can't find fresh lavender flowers you can substitute dried lavender from your local stores baking isle, though the flavor will be lessened.
