Simply an awesome way to come home at the end of the day to such wonderful aromas. I'll occasionally make this on Fridays, just minutes to prepare in the morning or night before, and turn on the pot. Sandwiches and leftovers all weekend!

Ingredients
- 3 -4 pounds corned beef brisket
- 6 carrots, peeled and quartered
- 6 medium sweet potatoes, peeled and quartered
- 1 bay leaf (or two small ones)
- 12 ounces beer
- 2 medium onions, peeled and quartered
- 1 small cabbage, wedged

Instructions
- Place potatoes, onions, carrots, and bay leaf in crock pot.
- Trim excess fat from brisket and put the meat on top of the veggies.
- If desired, place cabbage wedges on top of meat when you have about an hour left to cook.
- Cover with beer over cook on low heat for 9-11 hours.
- Slice brisket thinly across grain (let it cool 5- 10 minutes for easier slicing).
