Ingredients
  1. 1 Cup Almond Flour
  2. 1 Cup Splenda
  3. 1 Teaspoon Ground Cinnamon
  4. 1 Teaspoon Baking Powder
  5. 1/2 Teaspoon Salt
  6. Teaspoon Ground Cloves
  7. 3 Eggs
  8. 1 (15-Ounce) Can Pumpkin Puree
  9. 1/4 Cup Oil
  10. 2 Tablespoons Water
  11. 8 Ounces Cream Cheese
  12. 1 Teaspoon Vanilla Extract
  13. 1 Cup Splenda
  14. 1/4 Teaspoon Grated Lemon Rind

Instructions
  1. Preheat oven to 350° F.
  2. In a mixing bowl, combine the first flour, splenda, cinnamon, baking powder, salt and cloves. Next, add the eggs, pumpkin, oil and water; mix well.
  3. Spray a 11"x7"x2" baking pan with cooking spray. Bake in pan at 350°F for 20 to 30 minutes or until toothpick inserted near the center comes out clean, remove and cool.
  4. For the frosting, beat the cream cheese in a mixing bowl and add the Splenda, vanilla and lemon peel. Refrigerate for at least 15 minutes before cutting.
