Gluten Free Pizza With Caramelized Vegetables, Goat Cheese, and Pepperoni

This pizza is based on a gluten free pizza dough recipe you can find here. It makes enough for 7-8 pizzas and can be refrigerated for 7-10 days. In fact, the flavor gets better with a little aging. Once you have the dough made, you can whip up this, or several other of my pizza recipes, in just 10-15 minutes.
 

Caramelized Vegetable Pizza with Goat Cheese and Pepperoni

I modified this recipe originally posted on SheLikesFood.com to use our gluten free crust. Preparing the toppings takes a little effort but it's well worth it. Yummy! You can find our gluten free pizza dough here.

Ingredients
  1. 1 Baseball Size Chunk of Gluten Free Pizza Dough
  2. 2 - 3 Cups tomato sauce
  3. 1 - 2 Cups shredded cheese, whatever kind you like
  4. ⅔ Red bell pepper, sliced in strips
  5. ½ Red onion, julienned
  6. 2 Ounces goat cheese, crumbled, or desired amount
  7. Pepperoni, however much you desire
  8. Olive oil
  9. Butter
  10. Salt
  11. Parsley for garnish, if desired

Instructions
  1. Pre-heat oven to 500 degrees.
  2. Prepare the pizza crust as described in our gluten free pizza dough recipe
  3. Caramelize onions and red peppers: heat a pan over medium heat. Add a few drizzles of olive oil, then add onions and red peppers. Season with a pinch of salt and then cook on medium heat for about 10 - 15 minutes until onions and peppers and brown and caramelized, stirring occasionally. When they are almost done, add a little pad of butter and cook for another 2 -3 minutes, if desired.
  4. Evenly spread tomato sauce onto crust and top with cheese.
  5. Evenly distribute caramelized onions and peppers and pepperoni.
  6. Top with crumbled goat cheese.
  7. Cook pizza in the oven until crust is cooked through and cheese is melted, approximately 10-12 minutes.
  8. Remove from oven, let cool and then slice.
Notes
  1. Follow the directions for preparing the pizza dough as described, then top with the caramelized vegetables and goat cheese.
