Looking for something completely different to offer guests? These blackberry prosciutto wrapped shrimps are incredible. Make a double recipe, they'll go fast! Made with blackberries, prosciutto, shrimp, a little red wine and mint leaves, they're just 1 gram of Net carbs each! Wow!

Ingredients
  1. 10 ounces pre-cooked shrimp
  2. 2 tbsp. olive oil
  3. 11 slices prosciutto
  4. 1 tbsp. mint leaves, chopped
  5. 1/3 cup blackberries, ground
  6. 1-2 tbsp. erythritol (to taste)
  7. 1/3 cup red wine

Instructions
  1. Preheat oven to 425F.
  2. Cut each slice of prosciutto in half or in thirds, depending on how many shrimp you have and
  3. their size. Wrap shrimp with prosciutto, starting from the tail and working up. Lay on a baking
  4. sheet, drizzle with olive oil, and cook for 15 minutes.
  5. While shrimp are cooking, grind blackberries in a spice grinder. Add to pan with chopped mint
  6. leaves and erythritol. Let this cook for 2-3 minutes. then add red wine and stir, allowing it to
  7. reduce.
  8. Strain sauce or serve as is.
