Guilt Free Chocolate Pudding Dessert

This has to be one of the simplest and most satisfying guilt free desserts you'll ever make for yourself. Made with sugar free instant pudding mix and unsweetened almond milk, it's almost carb free, so indulge yourself with a little fruit topping. It takes just minutes to prepare.

Ingredients
  1. 1 1/2 Cups Silk Brand Almond Milk 30
  2. 1 Small (1oz) Package Sugar Free Chocolate Instant Pudding
  3. 2 Medium Strawberries
  4. or
  5. 6 Raspberries
  6. 1 Tbsp Whipped Cream (optional, adds 0.4g carbs)

Instructions
  1. Place the almond milk and pudding mix in a bowl and whisk for 2 minutes. If you are lazy like me, 30 seconds in a Magic Bullet or blender works just fine.
  2. Garnish with sliced strawberries or raspberries.
  3. Chill for 1-2 hours.
Notes
  1. The secret here is to replace the 2 cups of milk called for on the pudding directions with just 1 1/2 cups of Almond 30 milk. If you use the full 2 cups of Almond milk, the pudding will not set.
  2. You can use other brands of Almond milk, but Silk's Almond 30 milk has less than 1g of carbs per cup. Other Almond milk can have substantially more.
  3. You can OF COURSE use the same recipe with any flavor of sugar free instant pudding mix. And I highly recommend that you do!
