Ingredients
  1. 1 pound brussels sprouts, stems removed and sliced in half
  2. 4 slices bacon, diced
  3. 1 1/2 tablespoons olive oil
  4. 1 tablespoon grainy mustard
  5. 2 teaspoons dijon mustard
  6. 2 teaspoons honey
  7. 2 garlic cloves, minced
  8. 1/2 teaspoon smoked paprika
  9. 1/4 teaspoon black pepper
  10. a handful of roasted pepitas for topping, if desired

Instructions
  1. Preheat the oven to 425 degrees F. Place the sliced brussels sprouts and diced bacon in a bowl.
  2. In a bowl, whisk together the olive oil, mustards, honey, garlic, paprika and pepper. Pour it over the sprouts and bacon and toss well until they are all completely saturated. Spread the brussels on a baking sheet. Roast for 25 to 30 minutes, tossing once or twice during cook time.
  3. Remove the sprouts and if desired, top them with roasted pepitas for more crunch.
