Lavender Molten Lava Chocolate Cakes

The Lavender infused chocolate brings an incredible olfactory treat to these sugar free gluten free chocolate molten lava cakes. I modified the original recipe posted on Tasteaholics.com using culinary Lavender and sugar free Dark Chocolate. I dare you to not eat them all in a single day!

Ingredients
- 2 eggs
- 2 egg yolks
- 1/3 C Swerve
- 2 T coconut flour
- 1/8 tsp Xanthan Gum
- 1 tsp vanilla
- 1 pinch of salt
- 6 oz. sugar free dark chocolate, chopped **
- 1 stick unsalted butter
- 3 T fresh lavender flowers **

Instructions
- Mix eggs and sugar until fluffy in mixer
- Add flour and vanilla, then mix
- Melt butter, lavender and chocolate in double boiler until full incorporated. Strain out the lavender
- Gently fold the chocolate mixture into the batter with a spatula
- Grease 6 ramekins, place them on a baking sheet, and fill them with batter. Bake 8-10 minutes at 400 deg.
- Let cool for two minutes, run a knife around the cakes and invert on a plate. Finish with sifted powdered sugar and lavender seeds.
Notes
- I used Chocoperfection for the sugar free chocolate, but any quality brand you find at the store will be fine, though I recommend an organic brand.
- If you can't find fresh lavender flowers you can substitute dried lavender from your local stores baking isle, though the flavor will be lessened.
- OPTION: Garnish with fresh raspberries if you dare !
