There are a million low carb keto pancake recipes floating around on the web. I chose this one from Wicked Stuff because it's simple, and they are damned good. They are also the perfect base with which to create my all time favorite Monte Cristo Sandwich.

Ingredients
  1. 2 oz cream cheese (organic will be 1-2 carbs per serving at most)
  2. 2 eggs
  3. ½ tsp cinnamon
  4. 1 tbsp coconut flour
  5. 1/2 to 1 packet of Stevia in the Raw (or whatever Stevia you like)
Add ingredients to shopping list

Instructions
  1. Blend or beat together all of the ingredients until smooth.
  2. You’ll make two pancakes, so heat up a non-stick pan or skillet with butter or coconut oil on medium-high.
  3. Make them just like you would normal pancakes. Try to cook it most of the way on one side and then flip!
  4. Top with butter and/or a sugar-free maple syrup (check your labels, they aren’t all created equal!)
