A cool refreshing salad for summer afternoons, this chicken Waldorf salad won't disappoint you. Quick to prepare and with only 6 grams of net carbs per serving, you can enjoy it guilt free.

Ingredients
- 2/3 cup mayonnaise
- 2 red apples, cored &, diced
- 2 tablespoons lemon juice
- 2/3 cup sliced celery
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
- 1/4 teaspoon ground pepper
- 1/2 cup sliced seedless grape
- 16 ounces diced cooked chicken breasts

Instructions
- Season the chicken breasts lightly with salt and pepper and grill. Dice and set aside.
- In a bowl, combine the mayonnaise, lemon juice, salt and pepper. Add the chicken, apples, grapes and celery and tom to coat. Cover and chill.
- Sprinkle with walnuts just before serving.
